Thanks for your input on this. The GEOTOOLS_DEVELOPER is indeed an interesting feature which send some more details.  It looks like geoserver has some issues with (some) time-axes. I've managed to serve a file with a time-axis though, should take time to fully understand and test why it sometimes fails, will get back to this.
