Hey Ashley:

Did you get it working with only a couple of granules and no PostGIS? From
your description it sounded like you skipped straight to using a database?

1) It does not appear anyone else has replied to your email saying "I have
that problem also".  We could try clearly asking if anyone is using PostGIS
+ image mosaic in GeoServer 2.22.x

2) You should check if the issue is already reported, and if not please
report the issue with the information you have managed to collect thus far.

3) If resolving this matter is time sensitive you may wish to seek help
from some of the commercial support providers.

I am not greatly familiar with the image mosaic code myself. As a developer
I would step through the code in the older release to see how it is
intended to work. And then perform the same steps in the newer release.
