Is this an image mosaic? If so, what is in the mosaic configuration?

I have 3 band 8-bit RGB raster layers created using the GeoTIFF store type. The source geotiffs do not have the nodata value set, although the geotiffs returned by WCS GetCoverage requests are being updated with the nodata value set to 0. When viewed in a desktop GIS such as QGIS, cells with a value of 0 in any of the three bands are accordingly interpreted as nodata and appear as transparent on the map, resulting in significant amounts of the raster being omitted from the map.
I’m wondering if others have come across this and whether there’s a way of preventing the WCS setting the geotiff nodata value.
GeoServer version 2.22.2.
