What you're seeing seems quite normal to me. >From the documentation: "The environment variable SKIP_DEMO_DATA can be set to true to create an empty data directory."
So you switch from a demo data directory, that not only has data, but also several settings, to one that's completely empty, where everything picks built-in defaults. Using the internal data directory is anyways a bad idea, please externalize it instead <https://github.com/geoserver/docker?tab=readme-ov-file#how-to-mount-an-external-folder-for-use-as-a-data-directory>, and use a starter data directory with the base settings that best suit your needs.
