It was automatic - I called "mvn deploy" on the geoapi source tree and 
the above files were generated. Picking up the change for my geotools 
build on another box happy automatically.

For now I changed the version to the timestamped snapshot (a practice I 
think GeoServer release candidates are considering when depending on 
GeoTools?)

I did produce a single document page once (by virtue of "include" macro) 
but people hated it, I can export out a pdf if you like?
