I have several portage overlays in use, but I prefer to install jai from cvs because geoserver wcs pretty much depends on some recent jai bugfixes iirc. Besides, it's not hard to build and install from cvs. It was at least when I started using geoserver/wcs branch, and therefore I never bothered to look up JAI in the portage tree.
