Oh, wait a second.. nothing forces you to put the datastore among the geotools sources. You can put it among the GeoServer ones to start with, and have the web module refer it (hand modify the project). That should do it and it's a lot easier than what I said before (which is necessary only if you're working against a group of geotools modules or against a base module such as render or main).
