Hi all, Johann and I chatted about this on irc for a bit. I am afraid there is no good answer for Johann. The only people that have really dealt with this kind of functionality are the udig guys... and they did it with the catalog. Since there is not really a working version in geotools that is not really a feasible route.
What I would suggest is perhaps to add some methods to some the datastores that could be used to get this kind of information. For instance a method to the shapefile datastore which returns the underling file. Or a method to JDBCDataStore which exposes the name of the database,host,etc... Johann would have to do the work of doing instanceof checks and returning the appropriate descriptions etc... but at least it gives him a way out.
