So there is no uninstall; but you can run it again and it remembers what has been done. I was able to install the JRE entry you placed in there... it looks like java was installed into "C:\OSGeo4W\bin"
Oh wait it was installed into the "root" C:\OSgeo4W" location; ie... C:\OSGeo4W\bin has java C:\OSGeo4W\lib has the lib jars, C:\OSGeo4W\lib\ext has the imageio etc... There is no -vm parameter for uDig to tell it to use this Java hense the JAI warning.
