I would be happy to mentor this one (having sat through the design of WMS I
can at least relay what we learned from the experience).
Andrea has already responded about GeoServer WCS implementation. There are a
couple more things to note - I think WCS 1.1.1 may be out?

The OGC Climate Change Intergration Plugfest (in addition to providing data
for foss4g workshops) will also be standing up a couple WCS services. So far
two groups have step forward with NetCDF data; and both groups had been
forced into creating their own WCS implementations in order to handle the nD
case.

As such i am confident that we will have a nD WCS instance for you to test
against later in your timeline.
