Aligning GT-2.7.x to ImageIO-Ext 1.1.x (instead of 1.0.x)

We were thinking about aligning GT 2.7 to depend on ImageIO-Ext 1.1.x, as we
have already done for GT-Trunk.
With respect to older ImageIO-Ext 1.0.x series, 1.1.x provides improvements
like:
- Support for GDAL 1.7.3 (Currently ImageIO-Ext 1.0.8 still uses a very old
GDAL 1.4.5)
- Support for BigTIFF (Breaking the 4GB TIFF limit).
- Support for "destinationRegion" param to support oversampling/subsampling
without specifying sourceSubSampling parameters. This may be used when dealing
with readers which internally take care of performing subSampling/overSampling,
as the gdal readers.
