Right now, when deleting a store on GeoServer, no phisical delete is performed: records still remain into the database and granules (files) still remain on disk.
We should consider adding a delete method to StructuredGridCoverage2DReader to take care of removing coverages, cleaning up database, removing granules, removing auxiliary/indexing/metadata files (if any).
