Hi Jody, the QGis symbols come with a predefined set of variables indeed and the code provides defaults for them. You can check the documentation I wrote for it: http://docs.geotools.org/latest/userguide/library/render/svg.html#parameter-extension
Our version does not assume a fixed variable sets, but still requires some naming conventions in order to provide default values for variables (Batik is pretty nasty and writes warning to system.err if parameters are not being replaced with a suitable value....)
