There is not really an installation procedure. Geotools is a library,
not an application. Developers typically put the JAR in whatever
directory they wants, configure their IDE for using those JAR as a
library, and write their own application against them.
For an application built on top of Geotools, you can look:
On the client side: uDig (http://udig.refractions.net/)
On the server side: Geoserver (http://geoserver.sourceforge.net)
