Most all the current labeling options are detailed here: 
http://docs.codehaus.org/display/GEOSDOC/LabelingOptions  Not sure if
any of those are what you're looking for...  The page is for GeoServer,
but they're all available in GeoTools, in the latest releases of 2.1
and 2.2 I believe.
