I'm far from being an expert on the new xml stuff, but here is my guess:

I assume you're working with geotools trunk. It seems to be you're running an 
out of date version of it, since it _seems_ the binding for gml:Point is 
incomplete in the sense that it has no encode() implemented...
anyhow, I'm cc'ing Justing who would be able of giving a more accurate guess 
for sure.
