Ah sorry, did not see this answer.
I guess you're out of luck here, chinese characters are far more
complex than western ones, right (graphically, I mean)?
If so, the transformation of the font from its vector definition
to a raster is more time consuming.

One we would be to turn off antialising, the map would not look
as nice, but probably this would make things faster. Unfortunately
we don't have a switch to turn antialiasing off at the moment.

Oh, did you try the other generic ways of speeding up Geoserver
here?
