The code has been updated since then; but it is available in svn - as the plugin/property module. - http://svn.geotools.org/trunk/modules/plugin/property/src/main/java/org/geotools/data/property/PropertyDataStore.java A DataStore is not the most easy thing to start with; but it is a great deal of fun. As you get more of your DataStore to work you can see it on the screen in uDig, or start serving up KML using GeoServer etc....
