Hi Benoît,

For your regular cells a GridCoverage2D can store data of the type
that you describe.  Each cell can have multiple values.  You can
convert the grid to other projections.

To my knowledge Geotools doesn't presently support irregularly gridded
data. Depending on the specifics of your data you could handle this
with a vector layer instead.  I've done something similar when working
with a lattice of different sized, but still tesselated, cells.  You
might also want to investigate JGrass which I think supports TINs
(triangular irregular networks):
