It's not clear if you need help with your code or the SLD? If you want a tutorial on SLD try my course at https://www.e-education.psu.edu/geog585/l5_p4.html or check the geoserver site as Mike was writing a cookbook on SLD. If it's code then I'm less able to help, but it may be you are looking at the concept wrong. You are not in fact trying to render text from a dbf file but are trying to render a string attribute from your features. That may help.
