Ciao Jose, if you want to use imageio-ext with the latest GeoServer 1.7.x you just need to install the binary libraries for your system which can be downloaded from the imageio-ext websites. The jars are alredy part of GeoServer, therefore if you install imageio-ext with the installer you end up having them twice in the classpath, which will make GeoServer stop working.
