Hey Rob,

I'm not sure about a Geotools mechanism, but if you read up on UTM
zones in Wikipedia, you'll see there is a straightforward mathematical
test you can use to determine which UTM zone a lat-lng point falls in.
 You should check my math, but something like:

ceiling((180 - lng) / 6)

will give you the zone number, and you can set the N/S hemisphere
identifier based on whether your point is north or south of the
equator.  Note that UTM is only good between 80S and 84N, so you'll
need to figure out what to do with your high/low latitude points.
