Hello Jan, I'm not going to be much help to you with this one as I have very little experience with writing anything other than basic coverages to GeoTiffs. Also, looking at the GeoTiff writer source, I don't see where it is writing anything other than the spatial parameters and the 'geophysics' (ie, raw) values to the image so if you were hoping that it would save something akin to a map legend based on your Categories I don't think that will work.
However, please take that with a grain of salt - it could be completely wrong. This is a question better answered by Simone or one of the other people here more experience with categorized data and GeoTiffs.
