You will find that this example has been made into: a) a workbook for foss4g 2009 b) one of the documentation examples at geotools.org
It is now our lead doc example - we decided to show creating a feature type and features as a good way to introduce things. It was more more clear then reading a shapefile since during creation you get to try everything.
