I've just testing this with GeoTools 2.7-SNAPSHOT and there are still
some problems with using MapLayerTable which seem due to the swing
module not playing properly with the new map layer classes in the
render module.  I've also tested it using GeoTools 8-SNAPSHOT - things
work better there but are still not quite right.

There has been quite a bit of work happening on the swing and render
modules over the last few days for version 8-SNAPSHOT ( = trunk
sources in the subversion repository). I think the fastest way to get
things working for you is for me to fix the problems in that version
and for you to switch over to using it, instead of version 2.7, at
least for the moment. Later we may back-port the changes from version
8 to version 2.7, but I'm not sure about that.

I'll create Jira issues for the fixes and post links to this thread so
that you can follow how things are going.
