So there is no way to render Geoserver layers using Geotools?
Is this foreseen in the near future?
I want to build a server side rendering mechanisme using Geoserver layers 
without using Openlayers.

Not programmatically, there are no extension points to manipulate the map 
content.
In GeoServer you just provide a data source (a DataStore implementation), then
use the GeoServer GUI to configure layers out of it and associate them with 
styles
