We don't have a point to raster NN interpolation, but we do have a "Barnes
Surface"
one that provides good looking results and is fast enough to be run
interactively.

In the above case it's used as a rendering transformation, but if you look
in the geotools unsupported gt-process* modules you should find it as a java
class that can be run directly
