Andrea is right.
If you see the first gdalinfo you have posted, you can see that.
Quoting it:

For example:
gdalinfo over one source file (prados_clip.asc):
Driver: AAIGrid/Arc/Info ASCII Grid
Files: prado_clip.asc
prado_clip.asc.aux.xml
----------------------------------------------------------
Note the prado_clip.asc.aux.xml.... That it's the one reporting stats which
has been previously generated with a "gdalinfo -stats", I guess.
