There are no tutorials, but during the winter a couple of classes looking a
lot like data stores
were built to support the CSW effort in GeoServer, and they both build
complex features.
The most complete version of that source code, the one real complex
features (e.g, with
nested sub-features) from scratch is in these modules (taken from Justin's
GeoServer fork,
which still have to find its way back to GeoServer):

The above code, somewhere in there, also has support for parsing a complex
FeatureType
from a XSD file
I don't know about the ISO builder (which is the most complex), but for the
simpler
dublin core feature I had to create my own specialized builder to avoid
repeating over and
over the same bits of code.
