Going to see the geotools user list in case anyone else can help out :)

So the geotools-10.1-project download includes all the jars, so if you want you 
can set up an eclipse project with them and try out the quick start.
If you are following the maven quick start, then maven should download just 
what is needed during the first build.

I am going to guess you are following these instructions: 
http://docs.geotools.org/latest/userguide/tutorial/quickstart/index.html

Do you have an error log from running maven that you could share with us?
