Hi Paul, I suggest to take a look at this page of the documentation if you didn't yet: https://docs.geoserver.org/stable/en/user/data/raster/gdal.html#installing-gdal-extension You will find a couple of hints about versions compatibility and so on (ie. 32 vs 64 bit architecture)
Moreover, only some specific versions of GDAL have been tested and officially adopted by GeoServer. For different versions, you might need to update a jar too and see if everything works fine with your setup.
