I can't answer for uDig but their just http requests, so if you use any 
standard network proxy, and point uDig at that proxy, you'll see allthe gory 
detail you could want.  Or for REAL technogeek cred, use WireShark and you'll 
see even more.

On Windows?  Fiddler is probably your easiest bet.  I don't know how to point 
uDig at a proxy, though.
