These books cover many basic aspects such as geoids, projections, scale, data structures, colour theory, generalisation etc. Really, cartography is not just about old maps. The field of geocomputation is very useful as well. In "Mastering Algorithms with Perl" (http://www.oreilly.com/catalog/maperl/) there's an excelent chapter on geometric algorithms:

Though it is almost all theory with very little practical
instructions, I have found 'Principles of Geographical Information
Systems' by Peter Burrough and Rachel McDonnell

 to be a valuable reference when dealing with data structures and GIS

The above reference is mainly GIS and spatial statistics oriented..
there is not much detail about map projections, cartography or
geodesy. I can't recall a single book or source of info that would be
THE definitive reference for such topics. Check Amazon for anything by
John Snyder... his work is highly technical but the best at thoroughly
explaining the details of projections.
