Dale - My undergraduates were really taken with the concept of "mundane science" so I share some citations here with you. I include a link to a BBC news story that was sent to me by one of my students after the semester ended, as yet another example of mundane science. I also list an article on health and sustainable development, a somewhat different than usual "take" on environment and development.
Anything on Wangari Maathai would be a great addition! There is a link to an interview with Maathai on the WorldWatch Institute's webpage [http://www.worldwatch.org/pubs/mag/2004/173/] and there are a number of stories on Maathai and the Greenbelt Movement on the BBC website [http://news.bbc.co.uk/1/hi/world/africa/3726084.stm].
