My gerbils used to make a whole lot of noise by banging their water
bottles against the sides of their tanks.  (I use the kind of bottle
that hangs from a paper-clip-like wire attached to the top of the
bottle.)  I solved this by attaching the bottle to the tank cover far
enough away from all four sides so that any amount of swinging still
won't cause contact with the tank sides.  I also don't give them any
cardboard to chew on after 9PM or so.  There's not too much else they
can do to make noise now, other than squeaking and scratching, but that
doesn't bother me much.
