Yes!! They will mate. The only time you would not expect this to happen is if the female has reached menopause(her eggs are all used up). I'v read that this usually happens somewhere around three years? Check the NGS web site at www.rodent.demon.co.ud/index. Their site is filled to the gills with information!
 
On the second question, it does seem normal to see gerbils eating the dust bath. Mine do it too (eat chinchilla dust that is). Just don't leave the bath in the cage too long, they'll use as a potty if you do.

I was just wondering...because you put one male and one female gerbil together does it necessarily mean that the gerbils will eventually mate and have pups?
 
Also...something more off topic...my male gerbil loves eating chinchilla dust...is this normal?
