Need help on stabillizing the gerbil

Does anyone know how to hold a gerbil that I just bought from a store 2 days ago? I want to clip his nails but he keeps trying to jump outta my hands when I'm about to. I'm thinking Sunflower seeds to help control them but I'm not sure. Btw they don't seem to drink much water (I check every now and then) or like sunflower seeds. is this normal?
