Thanks for the replies about what could get a loose
gerbil to come back and be cornered.

Most mentioned peanut butter, some sunseeds.

However, my two escapees just sort of laughed at
me, sniffed from afar, and went about their business,
which didn't include 'going home' apparently.

As for using their mates/partners to get them to come
close enough to be snared; most are recently paired
up and that didn't work. :(

The last one showed it's face to a friend that is rather
rodent-hating; and I was summoned quickly for summary
rodent removal...and it had been 'stupid' enough to run
behind a desk where I cornered it.

So my DEW is now back with her mate; and a little
duct tape will get the point across, she's supposed
to stay home in the wee hours of the morning.
