Sore noses are not always caused by an allergy to bedding.  If you keep the
gerbil in a cage with bars, it may simply be the result of continually
gnawing at the bars.  Or continually gnawing at any other hard surface such
as a wooden house or plastic toy.

A sore nose is also a sign of stress.  As with people, stress has many
different causes.  For example there could have been a subtle change in the
dominance hierarchy between the gerbil and its
mate(s).  Perhaps you have just acquired some more gerbils and have their
cage in the same room.
You will have to think carefully about what stresses your gerbils have
recently been exposed to.

However, whatever the cause of the sore nose, the best thing is as Karin
already said, to treat the sore nose with an antibiotic ointment.  If
treated in this way, the nose usually gets better in 2-3 days
