Unless it's a pregnant or nursing female (last stages of pregnancy
or pups are very young) and it's very hot, the gerbils should do fine
if they've had access to water before the trip and afterwards.

If you're worried about moisture, for food give them a few apple
and carrot chunks.

I've air shipped animals, and if they have moisture laden food and
were serviced (watered) before and after being packed, they will
easily make 24 hours.
