I can't say for acorns, though if squirrels can eat them, then they shouldn't kill gerbils.
Timothy hay, while not a requirement, is very much okay for gerbils. My sister started feeding it to my gerbils when she was gerbil-sitting for me. One of them loves the hay to death (especially the flower parts) while the other is much more interested in using it as bedding material. I have to say that I like the smell a lot too...
