This would be because your agouti has black eyes, the dominant 'P' gene.  Your lilac 
has 'pp', thus making the red eyes.  Since every pup of two litters so far have all 
had black eyes, your agouti is probably 'PP'.  Had he carried a recessive 'p' gene 
(for red eyes), some of the pups could be 'pp', thus producing the red eye.  These 
pups will have the genetics of 'Pp', so when they are paired with another carrying 
black-eyed carrying 'Pp', or a red-eyed 'pp', they have the possiblity of producing 
red-eyed 'pp' as well.  :)  Hope that helps!  :)

PS - here are the basic genetics for your parents' colors:  (you said that they both 
are "w/ spot" so I am assuming they are spotted)

Spotted Lilac:  aaCCE-G-ppSpsp
Spotted Agouti: A-C-E-G-P-Spsp  (Your male is most likely A-C-E-G-PPSpsp)  What are 
the colors they have produced?
