running geronimo changes yet again

Use of the maven-plugin in the root maven.xml file prevented building 
geronimo with a clean maven repository.

To fix this and support the eventual construction of predefined server 
configurations ready for distribution I've created an "assembly" 
directory and moved the deploy/install/run targets there.

Eventually we may want to call one or more goals in assembly from the 
root build file, but for now you need to cd assembly to use this.
