Hi Carl, Not sure if anyone has shared code on this yet, but you may get some ideas from http://svn.affinitic.be/plone/kysoh/kysoh.preorder/ which iirc, allows user to order something and then they go back later and pay for it (when it is in stock).
Re taking credit card numbers and not processing them...strong caution against doing that. Any time you store a cc number you are exposing yourself to potential problems and liabilities. Good luck!
