GIMP 2.10 will not uninstall GIMP 2.8 - it simply installs over it (and
removes old plugins). It will however uninstall GIMP 2.6 and older first,
because from 2.8 onwards GIMP installs 64-bit version by default when
possible.

Official advice is to just install over the current version and let it
migrate settings.
