Very difficult to see anything from that animation except you have lots of text layers. There have been some changes to the text tool in recent updates. Going from Gimp 2.10.4 to Gimp 2.10.12, might be some inherited tool settings. Have you tried resetting? Edit -> Preferences -> Tool Options then click the Reset to Default button. Ok that. Restart Gimp. See if it makes a difference. Or it could be your workflow. Unlikely from your screencapture but make sure that the Image is in RGB mode. Change font from the text tool options and all the text in the text layer is altered. If the text colour has been changed in the on canvas text tool then select all and change back. If the font changes unexpectedly make sure the font still exists on the computer you are using. Windows 10 in particular can hide fonts from Gimp. Get the font and put it in the Gimp fonts folder.
