Hi @pdbailey0, what CPU are you using on this machine and can you share the
output of `arrow::arrow_info()` here? I'm guessing it's an older one and you
may have to re-install Arrow like you've done above _after_ you call
`Sys.setenv("ARROW_SIMD_LEVEL"="NONE")`.
