But if there are other Flight servers going there, I think the cookbook makes more sense. @lidavidm Looking further at the cookbook, I think there's a lot of work needed to get C# started there. [We don't even have the API docs up for C# yet.](https://issues.apache.org/jira/browse/ARROW-9406) I mostly worked on this to learn about the Flight protocol and because I had previous experience writing services in C#; I don't plan on focusing on C# long term. I'll keep this as a PR to add these examples to the main GitHub.
