It seems the not SDF tests work very differently, current tests in
[RedisIOTest](https://github.com/apache/beam/blob/0ef919ef49f4944b12ea19f959d66b6917480032/sdks/java/io/redis/src/test/java/org/apache/beam/sdk/io/redis/RedisIOTest.java#L72)
check that no elements are missing after read, added new test with different
data sizes and batch sizes that cover the cases in which an element was being
missed previously
