## Which issue does this PR close? N/A — follow-up to #5243 as described in the release process. ## Rationale for this change The 1.0.0 changelog was added to `branch-1.0` in #5243. The [release process](https://github.com/apache/datafusion-comet/blob/main/docs/source/contributor-guide/release_process.md) calls for a separate PR to bring the same change log file into `main`. ## What changes are included in this PR? Cherry-pick of 98b01810b from `branch-1.0`: - Adds `docs/source/changelog/1.0.0.md` - Adds the `1.0.0` entry to `docs/source/changelog/index.md` toctree No other changes. Applied cleanly with no conflicts. ## How are these changes tested? Docs-only change.
